Winemaking Style

After de-stemming and crushing, fermentation takes place in concrete tanks with a maturation period of 12 to 18 months.

To preserve their qualities of freshness, fruitiness and terroir expression, the wines of Château de Sales are generally only given 6 months of maturation in barrels, of which a maximum of 5% are new.
