The aromas of toast, black spice and juicy blackberries are sustained by this structured wine. Its texture shows concentration and dark tannins. The wine's density and concentration are impressive. Drink from 2028.

A blend 62% Cabernet Sauvignon, 36% Merlot, and 2% Cabernet Franc, the 2021 de Pez is deep garnet-purple in color. It springs from the glass with vivacious notes of kirsch, raspberry coulis, and red roses, plus hints of cardamom and underbrush. The light to medium-bodied palate is tight-knit and tense, with firm, grainy tannins texturing the crunchy red fruit flavors, finishing long and savory.

The 2021 de Pez offers up aromas of sweet blackberries, cherries, pencil shavings and white flowers, followed by a medium-bodied, ample and fleshy palate that's supple, suave and seamless. This attractively balanced, charming wine will drink well on release.

Mineral, iron, fine cassis and cocoa powder on the nose. This is very well-textured on the palate, showing elegance and refinement with a medium body and a linear, juicy finish. Delicious now, but can hold, too.

The 2021 de Pez has turned out well. It offers up a classic Saint-Estèphe profile of dried herbs, flowers, mint, scorched earth and dark, red-toned fruit. Medium in body yet quite deep, the 2021 possesses fine depth and tons of character. It's a terrific achievement in this challenging year.

Juicy and lively, bright and vibrant with a crisp texture to the red berry fruit with creamy sides and a hint of graphite and wet stone underneath. It loses some oomph and impact towards the finish just tapering out but the initial expression was nice and it ends with a cool note. Might need some more time or might just need to be enjoyed in its youth for a light, delicate but fruit-forward style.
Overview
Originally founded in the 15th century, Château de Pez is one of the oldest properties in Bordeaux’s Left Bank and the oldest domaine in Saint-Estèphe. Château de Pez consists of 104 continuous acres with 94 acres planted mainly to Merlot and Cabernet Sauvignon.
Since 2005, Pez has been on an exciting intellectual and technical journey of precision winemaking: experimenting with biodynamic viticulture, a new cellar allowing for plot-by-plot vinification, a meticulous selection of French oak barrels. Under winemaker Nicolas Glumineau's helm, the property bears the distinctive hallmarks of Saint-Estèphe with a modern, elegant twist.
Winemaking
Château de Pez remains resolutely faithful to wood. The blend is composed in December, and the wine is stored in barrels (35-50% new wood depending on the vintage) and racked every three months. It is to be noted that the wine undergoes absolutely no filtration.
Tasting Notes
This delicious nose of wild strawberry and juicy cherry is infused with pink rose and sandalwood. The palate is creamy and sweet, revealing fruity strawberry and floral notes of violet. There is a lot of roundness and a nice balance between power and freshness, thanks to the present, but fine and elegant tannins.
Harvest Notes
An exceptional terroir, a rejuvenated and restructured vineyard, modern technical facilities inaugurated in 2019... Everything is in place to write a new chapter at Pez, a beautiful and ambitious one! Despite the vagaries of turbulent weather, our vineyard has produced a full and very good quality yield. Power, control and balance are the key words that have guided our winemaking, to give this great Saint-Estephe the recognition it deserves!
After a mild and wet winter, the bud break of the vines started quite early, at the end of March. April and May, dry and cool, led to a late vegetative development. June, which was milder, triggered the flowering but was accompanied by record rainfall, even if less than in other Médoc appellations. The thermal inertness of the clay soils of Saint-Estèphe was a real asset for the Pez vineyard, allowing a more gradual development of the vines and thus avoiding too much exposure of sensitive elements (new leaves, berries) to fungal diseases like mildew. The cool and humid summer led to a slow veraison in August. The harvest began on September 23rd and was marked by a few rainy spells which did not affect the health of the vines; by October 7th, all our grapes had been picked.
