Overview

Jackson-Triggs Icewine stay true to the grassroots of making Icewine in Canada. The winery team ensures that the wine shows a true expression of the terroir and preserves the varietal characters of each Icewine Jackson-Triggs produces. This passion gives us Icewines that show purity and intensity of fruit, with the magical balance of sweetness and acidity that make them so unique and wonderful.

Winemaking

After undergoing a series of freeze-thaw cycles, the Vidal was harvested at -12°C on January 20th. Pressing took place over 48 hours as the grapes began to thaw before being basket pressed to stainless steel tanks. After the juice had cold settled for 72 hours, it was racked off and inoculated with an Icewine specific yeast designed to handle the extremely high sugar. The fermentation was arrested at a point where the residual sugar and acid were in complete balance. The wine was then bottled under cork to allow for excellent ageability of this uniquely Canadian product.

Tasting Notes

This exquisite wine exhibits aromas of Mandarin orange, fresh apricot, nectarine, grapefruit zest, yellow plum and sweet Asian pear. An extremely vibrant and complex nose transitions into an intriguing yet balanced palate that delivers incredible balance between acid and sweetness, delivering beautiful length for a classic Niagara Icewine.

Harvest Notes

The growing season started behind schedule with bud break mid-May. Weather during bloom and leading up to veraison saw above normal temperatures and abundant moisture. Weather conditions turned favorable from early September on with perfect ripening weather. Harvest kicked off mid-September with our first pick of Pinot Meunier for our sparkling program. Slow, steady ripening thanks to dry and mild weather allowed for wide picking windows for most varieties with fruit in immaculate condition. Harvest wrapped up on November 21st with our final pick of Merlot concluding a “classic” Niagara vintage. Weather conditions leading up to Icewine harvest in January were ideal, setting the stage for perfect expression of varietal character for all of our Icewines.

Perfect with Asian-inspired steamed dumplings such as pork and leek, or shrimp. Try it with peach cobbler for dessert!
